I call this Chicken Caesar because it's fit for a King! It's that good.
3 chicken boneless, skinless chicken thighs
3 boneless chicken breasts, cut thin
1 small jar artichokes, chopped in half
1/4 cup. sun dried tomatoes in oil, chopped in half
6 oz fresh mushrooms, sliced thin
1 tbsp. olive oil
handful Italian seasoning (or use basil, rosemary, thyme)
1/2 tsp salt, 1/2 tsp pepper
2 tbs freshly grated Parmesan or asiago cheese
1/2 cup Kalamata olives slices (take out pits if whole)
2 tbsp. balsamic vinegar
1 clove garlic, crushed or 1 shallot, minced
Season chicken with Italian seasoning, both sides and salt and pepper. In Dutch Oven or large skillet (with a lid) saute the garlic and mushrooms until fragrant (3-4 min). Add chicken and brown on both sides (3-4 min each side). Add in artichokes, olives and tomatoes. Cover and bring to simmer for 20 min. Remove cover and add balsamic for another 3 min. Add cheese on Serve with Spaghetti tossed with olive oil, crushed garlic and Parmesan cheese.
