Turkey Chili

You wont miss the beef, it's full of flavor.
3 Bean Turkey Chili
Ingredients:

1 onion, diced
2 cloves garlic, chopped
1 red pepper, chopped
3 lbs ground white turkey
1 large can plum tomatoes with juice
1 large can tomato puree
1 can stewed tomatoes with juice
1/2 cup salsa
2 jalapenos or poblanos peppers, chopped (less if you don't like the heat)*
1 can black beans rinsed and drained
1 can kidney beans, rinsed and drained
1 can pinto or other beans, rinsed and drained
1 tbsp. EVOO
2 tsp cumin
1 tsp cayenne
1 tsp salt
1 tsp cracked black pepper
1 tsp chili powder

I like to roast the peppers in the oven on a foil lined cookie sheet for 45 min until skins are black (turn occasionally) let cool and peel skin and chop. (don't touch anything until you wash your hands!)

In Dutch oven sautee onions and red pepper in the EVOO until soft, then add garlic for a few minutes more. Add turkey and break up, stirring until cooked (about 10 min). add spices and roasted peppers and stir. Pour in tomatoes and add beans. Bring to a boil and then turn heat to low/med and simmer 40 min to 1 hour. Check for seasonings and adjust if necessary.

This makes a lot, you can freeze some or if you use 1 lb turkey, just use 1 lg can tomatoes and 2 cans beans. cut the spices and peppers in half and you're good to go!
