Autumn Apple Crumb Cake

We just went apple picking. Well, we didn't actually pick any apples because it was so hot and there wasn't anyone else there- we would have had to wait a while to catch the wagon out to the orchard. BUT, we did pick up 2 bushels of fabulous McIntosh and Gala apples. They were a bit on the smaller side, so I put them to use in this cake. enjoy!

Ingredients:

1/2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 stick cold unsalted butter, cut into small pieces
3/4 cup plain greek yogurt
1 large egg, beaten
2 cups chopped apples, I used gala and mcIntosh, skinned and chopped, about 6 apples

streusel topping-
 1 cup all-purpose flour
1/2 cup light brown sugar
1/2 teaspoon salt
5 tablespoons cold unsalted butter, cut into small pieces

 The struesel topping-  Preheat the oven to 350°. Combine in a large bowl the streusel ingredients and mix with a fork until crumbs form.

Butter a 9" square casserole dih and set aside. Mix dry ingredietns thoroughly and add beaten egg, apples and yogurt. Mix until just blended, either in a mixer or by hand.  Add cake mixture to dish and smooth out. Top with the streusel and even out. Bake the crumb cake in the center of the oven for about 30 minutes, until risen and golden.  Let the crumb cake cool slightly before serving.

Cherry Blueberry Breakfast Cake

Recently I had to stay in for a few days and keep an eye on our dog who was under the weather. Daughter and I had planned to go to breakfast, but we made the best of ity. Instead, she made a big pot of coffee and I made this breakfast cake. What a treat, for both of us!
serves 4-6
Ingredients-
2 cups unbleached flour
2 tsp baking powder
1 tsp kosher salt
1 cup fresh blueberries
½ cup unsalted butter, room temperature
zest from 1 lemon
3/4 cup sugar
1 egg, let sit at room temperature
1 tsp. vanilla
1/2 cup cut up sweet cherries
1 container blueberry yogurt
½ cup buttermilk
1 tsp brown sugar
Mix dry ingredients and add blueberries, toss to coat.

In Mixer blend butter and sugar and beat well. Add egg, vanilla and lemon zest, mix well. Add yogurt and buttermilk, then add dry ingredients to wet in mixer and beat on low until just blended.Mix in cherries by hand. Pour batter in a buttered 9" casserole or glass baking dish. Sprinkle the brown sugar on top before baking. Bake in preheated 350 degree oven for 25-30 min until toothpick comes out clean and top is browned.

Plum Cake

Plum Cake
I just made this cake for my hubby's birthday. I was inspired by a recipe posted by a blog called a "Bowl of Mush" - Amelie's Plum Cake recipe.

Plum Cake

Ingredients:

4 red plums, quartered
3/4 cup softened butter
1/2 cup sugar
1 cup flour
1/2 cup cake flour
2 eggs, 1 egg white
2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
1 tsp orange zest
pinch nutmeg
2 Tbsp milk (I used almond milk)



Mix flours, baking powder, salt and nutmeg in bowl.
In mixing bowl, beat butter and add sugar. Scrape sides of bowl and add eggs, orange zest, vanilla and milk. Mix until combined and smooth. Spray 8x8 pan or round cake pan. Spread batter in pan and arrange plum quarters on top and push in slightly. Sprinkle plums with 1 Tbsp sugar. Bake in preheated 350 degree oven for 30 - 40 min until cake tester/toothpick comes out clean.  Cool on rack for at least 30 min. I recommend serving with a scoop of vanilla ice cream.

Meyer Lemon SPonge Cake with Lemon Curd and Buttercream

The lemon curd is to die for, the cake, eh, I will have to re-test before I post the recipe. I doubled it and sometimes that doesn't work!  Picture is here and you can see that it sure looks good, I hope it tastes good.
