¾ cup | Softened Butter |
¾ cup | Sugar |
2 | Eggs |
1½ cups | Mashed Ripe Bananas, about 3-4 |
1 tsp | Vanilla |
2 cups | Unbleached Flour |
1 tsp | Baking Soda |
Pinch of Salt | |
1 Tbsp | Apple Cider |
Frosting- | |
1 Tbsp | Softened Butter |
3/4 Cup | Peanut Butter |
2 cups | Confectioner's Sugar |
½ tsp | Vanilla |
In a mixer bowl cream together the butter and sugar. Mix in eggs and vanilla and beat until combined. Add in bananas and apple cider and mix thoroughly. Then add in flour, baking soda, salt and mix until just combined.
Pour in a buttered 10x9x2 baking pan and Bake in a preheated 350 degree oven for 20-22 min until toothpick comes out clean. Cool in a wire rack for at least 25 min.
In medium bowl beat the butter and peanut butter, add in vanilla and Confectioner's sugar. Beat until fluffy and refrigerate until ready to frost cake. Frost cake and cut in 16 bars.
A bit of apple cider sweetens these while cutting back salt a bit. Made these for a work functiona dn there were none left.
